Crown Roast of Pork stuffed with Wild Rice and Mushrooms

Epic presentation is everything with this Crown Roast of Pork, none of your guests will know how you did it! You don't have to tell them just how easy it actually is to make, even the most beginners of home cooks should be able to pull this one off! Bound to wow even the hardest to impress, this slow-roasted classic will leave you looking like a pro. For the pork roast... In a blender, puree the oil, garlic, and sage until smooth. Season with salt and pepper. Rub the mixture over the pork roast, making sure to cover the areas between the chops. Transfer the pork to a roasting pan and cover it with foil. Refrigerate it for at least 2 hours and up to 48 hours. Let stand at room temperature for 1 hour before roasting.

Ingredients
  1. 8-9 lb Crown Roast of Pork
  2. 3 tbsp olive oil
  3. 4 cloves garlic, chopped
  4. 2 tbsp chopped fresh sage
  5. 1.5 tsp salt
  6. 1 tsp freshly ground black pepper
  7. 2L Ray's Wild Rice and Mushroom Stuffing
  8. 1L Shopmade Free-Range Chicken Broth
Instructions
  1. Preheat the oven to 450 F.
  2. Turn the roast upside down (rib bones down) in the roasting pan.
  3. Roast for 15 minutes, and then reduce the heat to 350 F and roast until an instant-read thermometer reads 155 degrees F when inserted 2 inches into the center of the meat, about 1 1/2 hours more.
For the stuffing
  1. Hydrate Ray's Wild Rice and Mushroom Stuffing using the Free-Ramge Chicken Broth in a pot on the stove at medium - medium-low heat.
  2. The stuffing is ready to go as-is, all you need to do is heat it up prior to serving!
  3. When the roast is done, remove it from the oven, tent with foil, and let stand for at least 15 minutes.
  4. When the stuffing is done, mound half of it on a serving platter.
  5. Flip the roast upright on top of the stuffing.
  6. Fill the centre of the roast with the remaining stuffing - don't be shy, there's plenty of it to go around!
  7. Slice at the table for maximum wow-factor.
