Spicy Thai Roast Chicken

This easy and flavourful roasting chicken recipe is bound to tingle everybody's tastebuds!! Try serving alongside a thai peanut noodle salad, or even some fresh greens.

Ingredients
  1. 15 lb Free-Range Chicken
  2. 1 large (1 gallon) freezer bag
  3. 2 tbsp extra virgin olive oil
  4. 2 medium yellow onions, sliced
  5. 1 tbsp coarse sea salt
  6. 3-4sprigs of cilantro, washed
  7. 1 lime, quartered
  8. 1 juice of 1 lime
Marinade
  1. 1.5 cup low sodium soy sauce
  2. 2 tbsp asian fish sauce
  3. 2"of fresh ginger, chopped
  4. 4 cloves of garlic
  5. 4 tbsp fresh cilantro, washed
  6. 2 thai chilies or 1 habañero pepper
  7. 2 tsp ground coriander
  8. 1.5 limes, juiced
Instructions
  1. Rinse and pat down chicken and place in the freezer bag
.
  2. In a food processor, combine all marinade ingredients and pulse until pureed
.
  3. Pour marinade in freezer bag, push out excess air and seal
.
  4. Refrigerate chicken for 3+ hours (marinate overnight for best results)
.
  5. Remove chicken from bag of marinade and place into a roasting pan
.
  6. Discard marinade
.
  7. Arrange onions around the chicken
.
  8. Drizzle chicken and onions with olive oil and lime juice and season with salt
.
  9. Stuff quartered lime and cilantro sprigs into the chicken cavity
.
  10. Roast at 425F for 45-60 minutes – until internal temperature reaches 165 degrees Fahrenheit. Always use a meat thermometer!!
  11. Remove from oven and let rest for 10-15 minutes
.
  12. Carve and serve with onions!
